Royal Icing
I have been asked more than a few times what Royal Icing I use to decorate my Hattie & Mouse cookies. So I thought I would share a few options for you.
Royal Icing Powder
Up until recently I had been using Queen Royal Icing Powder that you purchase from Woolies. This is such a simple and easy way to make your icing. All you need to do is add water. However I have noticed it is becoming hard to come by. You need an electric mixer with a paddle attachment for this option.
Packet of Queen Royal Icing Powder
50ml water
Using an electric mixer with a paddle attachment, beat the powder and 50ml of water for 1 minute until it comes together. Add DROPS of water to the mixture until it reaches the required consistency you are after.
Traditional Royal Icing
As some of your may know, I am all about pantry staples and ‘making-do’ with what you have. So the traditional Royal Icing is a fantastic option. You can mix this by hand very easily and is by far the cheapest option.
1 1/2 cup icing sugar
1 egg white
1/2 teaspoon lemon juice (I use the bottled lemon)
Beat your egg white until it is foamy. Add icing sugar 1 Tbs at a time. When it has come together and looks luxurious and shiny add lemon juice. This will form quite a stiff icing which is fantastic to store in the fridge. Add DROPS of water to achieve the optimal consistency when you want to use it.
Pavlova Magic
Raw egg is not for everybody! When you do a quick google you will often find that the recipe calls for the elusive meringue powder which is readily available in America. An Australian substitute is the White Wings Pavlova Magic (you know the plastic egg!).
20g Pavlova Magic
50mls water
250g icing sugar (sifted)
Using an electric mixer, beat the Pavlova Magic and water until well combined and foamy. Add sifted icing sugar 1 Tbs at a time. Beat until icing holds stiff peaks (be patient). Again, this will form a stiff icing which is fantastic to store until you need it. Add water ONE DROP at a time until it reaches the consistency you are after.
